The regional version.

A dairy-free lemon granita using syrup and churning, with optional fine lemon zest retained.

  • Water, lemon and sugar form the base without milk or egg.
  • The syrup is cooled before fresh lemon juice is added.
  • Churning produces a fine frozen texture rather than a solid ice block.

Technique: lemon granita made with water, sugar and fresh citrus

The sugar is important to the freezing texture, not just sweetness. If holding in the freezer, let the granita soften briefly and stir before serving. Machine times vary.

Method

  1. 1

Warm water and sugar in a small saucepan and simmer gently for 5 minutes, stirring until the sugar dissolves.

  2. 2

Allow the syrup to cool fully. Finely grate only the yellow lemon peel and strain freshly squeezed juice.

  3. 3

Mix measured lemon juice and zest into the cold syrup. Refrigerate until thoroughly chilled.

  4. 4

Pour into a pre-cooled ice-cream machine and churn for about 35–40 minutes, following the machine instructions.

  5. 5

Stop when the granita is soft, fine-grained and spoonable. Serve promptly or freeze briefly to firm it further.

Serving and planning

Serve in chilled glasses, traditionally alongside a Sicilian brioche. This recipe uses an ice-cream machine rather than a coarse scraped-ice shortcut.

Allow 100 additional minutes for cooling, chilling and churning. This is included in the total recipe time, alongside active preparation and cooking.

Storage

Keep in a sealed freezer container for up to 1 month; never hold melted granita at room temperature for long.

Freezing

Freeze airtight. Allow to soften briefly and stir to restore a spoonable consistency.

Reheating

Do not heat; let frozen granita soften only enough to scoop.
