Method

Season the chicken, then brown it skin-side down in the oil; turn and brown the other side.
Set a timer: 12 minutes - 2
Remove the chicken and soften the onion, carrot, celery and garlic in the same pan.
Set a timer: 8 minutes - 3
Add the wine and simmer for two minutes, scraping up the browned bits.
Set a timer: 2 minutes - 4
Add tomatoes and rosemary, return the chicken, cover and simmer gently until cooked through.
Set a timer: 20 minutes - 5
Stir in the olives and simmer uncovered until the sauce lightly thickens.
