    Rub butter into flour with 60 g sugar, then add pastry egg and aniseed to form a dough.

    Line a tart tin and chill while heating the oven to 180°C.

    Mix cheese with remaining sugar, filling eggs, mint and lemon zest.

    Fill the shell and bake until set and lightly golden, then cool before slicing.

Flaó is the traditional fresh-cheese tart of Ibiza and Formentera, unmistakably scented with mint and anise.
