    Heat the air fryer to 195°C while you cut the halloumi and vegetables into evenly sized pieces.

    Toss the peppers and onion with the olive oil, oregano, lemon zest and black pepper.

    Air fry the vegetables in an even layer until they begin to soften and colour, shaking the basket halfway through.

    Set a timer: 6 minutes

    Add the halloumi, toss gently and continue air frying until the cheese is golden at the edges and the peppers are tender.

    Serve immediately with lemon wedges for squeezing over the hot halloumi and vegetables.

Halloumi is closely associated with Cyprus, but cooking it with peppers in an air fryer is a modern convenience rather than a traditional Cypriot dish. Serve this adaptation straight away, while the cheese is crisp outside and tender within.

Storage

Cool promptly and refrigerate in a sealed container for up to 2 days.

Freezing

Freezing is not recommended because the vegetables and halloumi lose their texture.

Reheating

Reheat in the air fryer at 180°C until piping hot throughout and only once.
