    Cook the rice in the stock until absorbed, then stir in saffron and Parmesan; spread out and cool completely.

    Set a timer: 20 minutes

    Cook the onion and beef until browned, add tomato paste and peas, then reduce until the filling is dry.

    Set a timer: 15 minutes

    Enclose a spoonful of ragù and a cheese cube inside each portion of cold rice, shaping firmly into balls.

    Whisk flour and water into a thin batter, dip each ball, then coat thoroughly in breadcrumbs.

    Heat the oil to 175°C and fry in batches until deep golden; drain and rest briefly.

Sicily’s fried rice speciality is called arancine in Palermo and much of western Sicily, while arancini is common in eastern Sicily and wider Italian usage. Shapes and fillings also vary by locality; this recipe uses saffron rice, meat ragù, peas and caciocavallo.

Refrigerate cooked arancine for up to 2 days.

Freeze breaded, uncooked arancine for up to 2 months.

Reheating

Bake at 190°C until crisp and piping hot throughout.
