Method

Peel alternating strips from the aubergines, salt briefly, rinse and pat dry.

Brown the aubergines in some olive oil, then place them in a baking dish and split the centres.

Slowly soften the onions and garlic, add tomato and sugar, and cook until rich and jammy.

Fill the aubergines, add a little water and remaining oil, then bake at 180°C until completely tender.

Cool and finish with parsley and lemon before serving.
İmam bayıldı is a Turkish olive-oil dish of whole aubergines filled with abundant onion, garlic and tomato, traditionally enjoyed cool or at room temperature.
Storage
Refrigerate leftovers promptly in a sealed container for up to 3 days.
Freezing
Freeze only when the finished texture remains suitable; thaw overnight in the refrigerator.
Reheating
Reheat gently until piping hot throughout, unless traditionally served at room temperature.
