Method

    Knead flour, yeast, water, salt and oil into dough and leave to rise.

    Soften onions, add drained tomato and cool, then fold in anchovies and parsley.

    Roll two dough rounds, line a tray with one, add filling and cover with the second.

    Seal, vent and bake at 210°C until deeply golden.

Viška pogača is the filled bread pie of Vis, traditionally enclosing onions and salted fish; tomato distinguishes the Vis version.
